Mel’s Hot Honey is a small-batch hot honey company founded by Mel Gonzales, a hospitality professional and Colorado native with a lifelong love for bold, comforting flavors rooted in the Southwest. Growing up, Hatch green chiles were a foundational ingredient in her kitchen — a flavor tied to family, community, and the kind of food that brings people together.

Built from that connection to flavor and hospitality, Mel’s Hot Honey began as a passion project focused on creating a hot honey with real depth and character. Every batch is crafted with intention using local Colorado wildflower and alfalfa honey sourced from Bee Squared Apiaries out of Berthoud, Colorado, and real Hatch green chiles that are hand-processed by Mel herself.

While Mel leads the recipe development, sourcing, and production, the business is supported by a small circle of helping hands when it comes to packaging and getting bottles out into the world — allowing the brand to stay rooted in its small-batch, hands-on approach while continuing to grow.
